Pumpkin Gooey Butter Cakes

Cake:
1 (18 1/4-ounce) package yellow cake mix
1 egg
8 tablespoons butter, melted
Filling:
1 (8-ounce) package cream cheese, softened
1 (15-ounce) can pumpkin
3 eggs
1 teaspoon vanilla
8 tablespoons butter, melted
1 (16-ounce) box powdered sugar
1 teaspoon cinnamon
1 teaspoon nutmeg

Preheat oven to 350 degrees F.

Combine the cake mix, egg, and butter and mix well with an electric mixer. Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan.

To make the filling: In a large bowl, beat the cream cheese and pumpkin until smooth. Add the eggs, vanilla, and butter, and beat together. Next, add the powdered sugar, cinnamon, nutmeg, and mix well. Spread pumpkin mixture over cake batter and bake for 40 to 50 minutes. Make sure not to overbake as the center should be a little gooey.

Serve with fresh whipped cream.

I think the exact opposite of what KMoony describes a Midwest accent as sounding like. The area that I'm from (and Pudie and Bittersweetzero) has a very flat sound, and one-syllable words become two-syllable words (coo-uhl instead of cool, doh-int instead of don't). Also, our "o" vowel is ridiculously pronounced, like a less-exaggerated version of the movie "Fargo." Kinda like Canadian, but not quite as pronounced.

jazz
January 15th, 2006, 08:03 PM
i was gonna say...the recipe for my nuts is:

tongue
my ear

anyways, here's the recipe (verbatim):

1 tablespoon egg white
2 cups pecans or walnuts
1/4 cup sugar
1 tablespoon cinnamon

heat oven to 300F. place nuts in small bowl; :nelson: pour egg white over nuts and stir until nuts are coated and sticky. :lmao: mix sugar and cinnamon; sprinkle over nuts :teehee: stirring until sugar mixture completely coats nuts. spread on an un ungreased baking sheet. bake 30 minutes.

makes two cups

anyways, i tried it this way the first time (the ones i took a picture of), but i felt there wasn't enough sugar. so instead of 1/4 of sugar, i put in a 1/2 cup. i also put in the whole egg white because it was only a little more than the tablespoon in the recipe.

they came out perfect with the minor adjustments i made to the recipe. well, at least for me.

I like yogurt for breakfast, with fruit mixed in. Or a yogurt and fruit smoothie.
